I have always loved lemon bars! They are one of my favorite desserts! I started making them in the sixth grade and I like to believe that they have only gotten better. I was kind of hesitant to share this recipe because it's so dear to my heart, but I got a lot of questions about them, so here we go!
To Start:
The ingredients that you will need are:
Crust:
1/2 Cup White Sugar
2 Cups All-purpose Flour
1 Cup Butter (softened)
Lemon Custard:
4 Eggs
1 1/2 Cups White Sugar
1/4 Cup All Purpose Flour
3 Lemons (Juiced)
1 Tsp Vanilla (or if you're like me just pour in and have fun)
Part 1: Prep
Pre-heat the oven to 350 degrees
Part 2: The Crust
In a medium bowl, blend together softened butter, flour, and sugar
Use your hands to continue mixing the batter until everything is evenly mixed and becomes dough-like
Press into the bottom of an un-greased 9x13 pan
Use a spatula to even out the corners
Put in the oven for 15 to 20 minutes or until golden brown
Part 3: The Lemony Goodness
In a bowl, whisk together sugar and flour
Add in eggs and lemon juice
Make sure the sugar and flour are completely dissolved
Mix in vanilla
Pour over baked crust
Place in the oven for 20 minutes
I always like to wait for a film like texture to form from the custard before I take it out
Part 4: When the oven beeps
Let the bars sit for a few minutes
Once taken out of the pan, lightly dust the top with powdered sugar
