Reese's Peanut Butter Cup(cakes)

I have never been a big fan of chocolate, but recently it has been a heavy craving that I just can't let go of. I came up with this recipe, because of one of my closest friend's 18th birthday. I quickly dropped them off at her door and drove away as a small birthday surprise!

Although, I did love this recipe, there is one thing I can't wait to experiment with and change... the chocolate cake. I have never made chocolate cake from scratch before but as soon as I come up with a great recipe I will be sure to share it with you guys!

To Start:

The ingredients that you will need are:


Cupcakes:


• 1 box of chocolate cake mix (I prefer to use Betty Crocker's Super Moist Dark Chocolate cake mix, but any of your favorites will work)

• Mini Reese's Peanut Butter Cups

• Peanut Butter

• Mini Semi-sweet Chocolate Chips


Peanut Butter Frosting:

  • 1 Cup Unsalted Butter

  • 3/4 Cup Peanut Butter

  • 3 Cups Powdered Sugar

  • 1 Tsp Vanilla Extract

  • 1/4 Tsp Salt

  • 3 Tbsp Milk


Part 1: Making the Cupcakes

  1. Make the cupcakes as directed on the box (I like to use milk instead of water and add more in order to keep the moisture)

  2. Place cupcakes in the oven and start on the frosting


Part 2: The Frosting

  1. Beat the butter until light and fluffy

  2. Beat in the peanut butter

  3. Beat in 1 cup of powdered sugar at a time, then add in vanilla, milk and salt

  4. Keep blending until everything is mixed evenly and smooth

  5. If piping frosting, place frosting in the fridge for about 10 minutes


Part 3: Adding the Surprise

  1. When cupcakes are slightly cooled, use a small spoon to scoop out a small amount of the middle-top of each cupcake (you can used the cake pieces to make cake pops or as an ice cream topping!)

  2. Using a small Ziploc bag filled with peanut butter, drop about a tsp into each cupcake

  3. Place a mini Reeses into each cupcake on top of the peanut butter

  4. Place all cupcakes back into the oven at 100 degrees F for about 3-5 minutes

  5. Take out and let cool


Part 4: The Finishing Touches

  1. Take the frosting out of the fridge and place on the cupcakes (You can use a piping bag, Ziploc Bag or butter knife to spread)

  2. Sprinkle a few Semi-sweet chocolate chips on top and...

Part 5: EAT! EAT! EAT!
