Tiana's Beignets

One of my favorite movies is "The Princess and the Frog"! I love the storyline and the characters. Not to mention, Tiana can sing, dance, and cook! We're basically the same person.
Last Christmas, my brother got me a book full of recipes from the greatest Disney movies. When I came across the beignet recipe I was so excited, but I knew that I wanted to put my own spin on it. With it being spooky season, or more importantly fall, I had to add a little spice. Apple Pie Spice! Below you'll find the recipe for apple pie spice beignets. Bake, create, and enjoy!
To Start:
The ingredients that you will need are:
Beignets:
• 3/4 cup whole milk, warmed
• 1 1/2 cups buttermilk, warmed • 3 tsp rapid rise yeast
•1/4 cup granulated sugar • 4 1/2 cups flour
•1/2 tsp baking soda
•1/4 tsp salt
•2 tsp ground cinnamon
•1 1/2 tsp ground ginger
•1 tsp ground nutmeg
•1/2 tsp ground allspice
•1/2 tsp ground cloves
•Canola oil, for frying
•Powdered sugar, for dusting
•Honey and/or caramel, for drizzling on the top
Apple Compote:
3 apples, peeled and finely chopped
1 1/2 Tbsp lemon juice
1 1/2 tsp vanilla extract
Apple Pie Spice
Allspice
Cinnamon
Brown Sugar
Nutmeg
Clove
Ginger
1/4 cup butter
* I didn't measure the spices. I added them as desired.
Part 1: Beignet Dough Prep
In the bowl use a mixer add the warmed whole milk and buttermilk
Stir in yeast and sugar
Let sit for about 5-10 minutes or until yeast becomes bubbly. (During this time I peeled my apples)
In the same mixing bowl, add in the flour, baking soda, salt, and spices. Mix on low with the mixer.
Using your hands, knead the dough until everything is spread evenly. Form into a ball
Cover and let rise for an hour.
Part 2: The Compote
Mix apples, lemon juice, vanilla, and spices in a small bowl.
Using a small pan, melt 1/2 of the butter and spread around the pan.
Add in apple mixture and place the other 1/2 of butter on top.
Leave mixture on medium heat for 5-7 minutes and stir.
Leave on low heat for 5 minutes, then take off to cool.
Part 3: Finishing the Beignets
On a floured surface, place the dough and roll out until 1/2 an inch thick.
Heat oil in a large pan on high heat for about 10 minutes or until 350 degrees Fahrenheit
Place batches of cut dough in hot oil on side one
Using a large spoon, flip over to side two
When both sides are golden brown, remove and transfer to a paper towel lined tray.
Let cool
Part 4: Adding the Extras
Create a piping tool using a decorating tip and large Ziploc bag
Use a knife to slit holes into the sides of your beignets.
Place a decent amount of apple compote into the Ziploc bag
Place tip of piping tool into the slit of beignet and squeeze until 3/4 of the way full.
Once done filling all beignets, dust with powder sugar and drizzle honey/caramel on top!
