Vegan Banana Bread

Updated: Aug 8, 2020

Hi Everyone! One of my all time favorite treats to bake happens to be banana bread. Over the past few years I have been trying to slowly transition my baking recipes into vegan friendly treats. The biggest problem I found is trying to balance the ingredients and trying to keep the bread moist but below is a recipe for you to try! Don't forget to leave comments/feedback, Enjoy, and Happy Baking!

To Start:

The ingredients that you will need are:

  • ⅛ tsp Salt

  • 4 Bananas

  • ⅔ cup Sugar

  • 2 cups Flour

  • 1 tsp Vanilla

  • 1 ½ tsp Baking Powder

  • 3 tbsp Milk

  • Optional:1 serving plant protein

The ingredients that you will want to substitute are:

  • Milk

  • Flour

You can get both ingredients from target, whole foods, or Mother’s. I spent a long time trying to find good substitutes for milk and flour that are healthy substitutes. I have also used soy milk, almond milk or even just water in the past, but I have found that oat milk is the best for me. I also liked to use almond or coconut flour. I like to add in plant protein because it replaces the missing nutrients that the regular products would usually provide.

Part 1: Prep

  1. Pre-heat the oven to 350 degrees

  2. Grease your pan with oil (or butter- to keep it vegan you can use country crock or earth balance)

Part 2: Wet ingredient prep

  1. Blend the bananas with a mixer on medium speed

  2. After the bananas become like a sauce, you are going to add the sugar, vanilla, and milk

Part 3: Dry Ingredients

  1. In the separate bowl you add the flour, baking powder, protein powder and salt.

  2. Mix them together

Part 4: Put everything together

  1. Slowly blend the dry ingredients into the wet until everything is smooth

  2. Pour the mix into the pre-greased pan

  3. Put the pan in the oven for 60 minutes

*You can test the bread by sliding a clean butter knife in the middle of the loaf and if the knife comes out clean you're all done!

That’s it!

*Below are a few pictures of what the bread looks like when it comes out of the oven
