Vegan Lemon Poppy Seed Loaf

This week I will be sharing my newly created recipe for Vegan Lemon Poppy Seed recipe. I was inspired by a post that I found in my Instagram's saved files (that was probably there for months). Please, please, please share your experience with the recipe and let me know what you think! Below you will find all of the ingredients and steps, so enjoy and Happy Baking!


To Start:

The ingredients that you will need are:

  • 3 cups of almond flour

  • 1 cup all purpose flour

  • 1 cup brown sugar

  • 1 tsp salt

  • 1 tbsp baking powder

  • 1 3/4 cup oat milk (warmed; I used a pot on a stove, but a microwave works just as well)

  • 1 cup coconut oil (melted)

  • 2 tsp vanilla extract

  • 4 tbsp lemon juice

  • 2 tbsp lemon zest

  • 3 tbsp poppy seeds

Part 1: Prep

  1. Pre-heat the oven to 350 degrees

  2. Grease your pan with coconut oil and dust with flour

Part 2: The Mix

  1. In a large bowl, use a whisk to mix together coconut oil, oat milk, vanilla, lemon juice, and lemon zest.

  2. Add in the brown sugar and whisk until dissolved

  3. Add salt, baking soda, and mix until foam appears

  4. Time for the flour; Add in both types of flour one cup at a time


Part 4: Oven Time!

  1. Pour into the greased pan and spread evenly

  2. Bake for 1 hour and 15 minutes or until you can have a clean knife test

*You can test the bread by sliding a clean butter knife in the middle of the loaf and if the knife comes out clean you're all done!


Part 4: While in the oven...

*Although not needed, you can make a quick glaze to cover the top and add even more lemon flavor

Ingredients:

  • 1 cup powdered sugar

  • 3 tbsp lemon juice

  • 1 tsp vanilla (or more if you love the taste like I do)

Mix these together until smooth and you are all set


Part 5: When the oven beeps

  1. Let the bread sit for 15 minutes to cool

  2. Once taken out of the pan, spread the glaze and let sit to harden


Part 6: EAT! EAT! EAT!


Personal Review:

  • I liked that the bread was very flavorful and the poppy seeds added a cool texture. It was also a great result to find that on the first try for this recipe I was able to get a near perfect amount of moisture.

  • I didn't like that the recipe took longer than expected when in the oven. I am usually a very patient person, but I was constantly checking the oven and poking at it to see if it was done.

  • I am glad to say that my family enjoyed it and it brought an amazing smell to my house!
